Radical Roast Beef Salad

 

1 1/2 lbs thin sliced cold cooked roast beef

1 thin sliced yellow onion
3 tablespoons chopped parsley
1/2 teaspoon marjoram
1/4 cup olive oil
2 tablespoons vinegar
1 teaspoon dry mustard

 

 

Place slices of beef in a deep platter. Break onion slices into rings and arrange on top of beef. sprinkle with parsley and marjoram. Combine oil, vinegar, and mustard in a jar. Cover and shake until well blended.  Pour over beef and onions. Cover loosely and chill for 3 hours before serving. Serves 8.
